Fermentation & Clay Aging: The wine is fermented and aged for 12 months in clay amphorae, a nod to historical Hellenistic winemaking that allows gentle micro-oxygenation without adding wood flavors.

Oak Maturation: It is then transferred to oak barrels for two years, adding complex layers of spice, refining the grape’s aggressive tannins, and guaranteeing immense aging potential in the bottle.
The resulting wine boasts remarkable complexity, a robust structure, and a distinct mineral backbone born of the island’s volcanic ash, pumice, and basalt soils. Production is extremely limited.
