Santorini Olive Oil – A Legacy of Thousands of Years

The presence of the olive tree in Santorini stretches deep into history. In fact, the island is home to the oldest known olive fossil in Greece, a testament to the plant’s ancient roots in the region. Millennia later, excavations at prehistoric Akrotiri revealed evidence that olive oil production and export took place on the island over 3,500 years ago.

Today, this timeless bond between Santorini and olive cultivation has been revived. Over the past two decades, more and more locals have been planting olive trees, breathing new life into a tradition that had faded for many years. Supporting this revival, the Association Cooperatives of Theraic Products – Santo Wines established a state-of-the-art olive mill, giving both producers and the product itself the attention they deserve.

From this modern facility, using only Santorini-grown Koroneiki olives and cold-press mechanical methods, the Santo Roots range of extra virgin olive oils is produced. These are premium oils with a rich aroma, distinctive fruity flavor, and the authenticity of truly local production.

The collection now features three exceptional products:

  • Extra Virgin Olive Oil – available in 100ml and 250ml bottles

  • Extra Virgin Olive Oil rich in antioxidants – with high polyphenol content, in 100ml and 250ml bottles

  • Extra Virgin Olive Oil infused with Thyme – available in 100ml bottles

Santorini olive oil is making a strong comeback in the island’s gastronomy. It is not only a reminder of its deep-rooted history but also a modern, high-quality product with a unique identity and promising future. The elegant packaging reflects a contemporary style while staying true to the island’s traditions.
