Just a few months after the launch of the new olive mill of the Association of Santorini Cooperatives (Santo Wines) in October 2024, the first products under the Santo Roots label are now available, marking a new chapter for Santorini in the field of olive oil production.
These are two exceptional extra virgin olive oils that reflect the character of local cultivation, a commitment to quality, and the potential of the island’s brand-new olive mill. Both are monovarietal Koroneiki olive oils, released in elegant 100ml bottles, and belong to the highest category of olive oil, as they are produced exclusively through mechanical methods.
The first is a classic extra virgin olive oil, while the second is rich in polyphenols, offering enhanced antioxidant properties. As is well known, polyphenols contribute to the protection of blood lipids from oxidative stress.
With the entire production process taking place on the island of Santorini, these new olive oils are products of added value that highlight the island’s identity and bring new dimension to the modern utilization of Santorini’s agricultural tradition.
