Wine maker’s notes

Vinification Techniques: The wine, which is fermented by 50% in oak barrels, intensive, perfect structure, nice acidity, and great length.  After undergoing the 12-hour skin contact process at around 10^οC, the grape must is placed in small 1.000 litre INOX tanks and in new 225lt French oak barrels. Fermentation develops on its own at a gradual pace.

Organoleptic Characteristics: The citrus aromas of the Assyrtiko grapes combined with the floral aromas of the acacia wood and the vanilla of the oak result to a wine with a highly complex aromatic profile. Minerality and well-balanced acidity give depth and longevity.

Serving Suggestions:  grilled fish, white meats, lamb with lemon sauce, assortment of yellow cheeses. Best served at 12oC.
