Produced by the Vassaltis Vineyards, the newest winery in Santorini located in the Vourvoulos area, on the road to Oia. Its name was inspired by the black volcanic rock formed by the cooling of the vassaltic lava that covered the island of Santorini.
Typical, white wine vinification techniques, long fermentation in stainless steel tanks. 12 months on the lees and 7 more in the bottle.
Yellow color with green tints. Rich and complex nose, ripe lemon and other citrus fruits, flintstone, bread, honey, jasmine, toast. In taste you will recognize salt, citrus, stonefruits, balancing acidity, structured and concentrated, full-bodied, very long after-taste
Ideally paired with grilled seafood, roasted white meat. It is best served at 12°C.
