Wine maker’s notes

Vinification
100% Xinomavro from high-altitude vineyards in the Xino Nero and Agios Panteleimonas areas. A short pre-fermentation cold maceration is followed by white vinification. The wine matures on the lees in stainless steel tanks for 5 months.

Tasting & Pairing Notes
A fruity nose with aromas of red fruits—mainly strawberry and cherry. Herbal hints of eucalyptus and spicy notes of white pepper. Elegant on the palate, with crisp acidity and an aromatic finish. Pair it with Mediterranean dishes, chicken with aromatics, pork fillet, seafood, grilled vegetables, salads. Best served at 9-12°C.

His new winery, Arktos Elevation Vineyards, is nestled at an impressive 700 meters above sea level in Amyndeo, Florina.
