Wine maker’s notes
Grapes from our organic vineyards, cultivated at altitudes from 70 up to 330 meters. Skin contact for 12 hours, the separation must from grapes, clarification, and fermentation with indigenous yeasts at 18 °C. Matured for 6 months in stainless steel tanks and then bottled without filtering.
Yellow-golden colour, expressive aromas with fine notes of exotic fruits, citrus, and lemon flowers. Lively and balanced on the palate with long aromatic aftertaste and tones of minerality, caramel, and butter.
Served at 12-14 °C, with seafood, fish, pasta with light sauces or salty cheese.
The label on the bottle of Aidani is a drawing of Stella Hatzidakis during preschool. Stella is the daughter of Haridimos and Constantina. She drew it when she was 3.5 years old!
