Notes
Produced by the Vassaltis Vineyards, the newest winery in Santorini located in Vourvoulos area, on the road to Oia. Â Its name was inspired by the black volcanic rock formed by the cooling of the vassaltic lava that covered the island of Santorini.
The fermentation of this Barrel-Aged Santorini began in stainless steel tanks and then transferred to oak barrels. After the end of fermentation, the sludges remained for 3 months in the barrels and 7 months even a stainless steel tank.
The acidity, the mineral, and full of citrus aromas remain and also get enriched by a smoky character, which goes along perfectly with its long aftertaste.
Ideally paired with pies, grilled fish, white meat cooked with white sauce, hard cheeses. It is best served at 8-10oC.
