Produced by the Vassaltis Vineyards, the newest winery in Santorini located in Vourvoulos area, on the road to Oia. Its name was inspired by the black volcanic rock formed by the cooling of the vassaltic lava that covered the island of Santorini.
Vassaltis Santorini was fermented in stainless steel tanks and stayed with the mud for six months.
Bright yellow color with green highlights. Fine and elegant with citrus, lemon, green apple, peach, flint, and mineral notes. On the mouth, it is balanced with vivid acidity and salty aftertaste.
Ideally paired with pan-fried fish, pies with greens and herbs, green salads, “saganaki” cheese (traditional recipe of spicy, fried cheese). It is best served at 10-12oC.
