Wine Maker’s Notes
Koutsoygiannopoulos is the name of the family that produces the wine. The winery was founded in 1870 by the brothers Grigoris and Dimitris Koutsoyannopoulos and is located in Vothonas. The vineyards are located in the Exo Gialos area of Fira (Aspra Homata).
Vinification: The harvest is manual. The grapes are collected in crates, never completely filled, to avoid broken berries. They immediately go to the facilities of our winery where they are placed in special cooling chambers, at a temperature of 10 ºC, in order to avoid any oxidation and to protect the aromatic potential of the Aidani variety. This is followed by cold maceration of few hours. Then, the must is vinified following the classic method of fermentation at 17oC into stainless steel tanks in our establishments. The vinification of the wine takes place with the least of any technical edit. Thus, wine sediments may occur in the bottle. Bottling takes place in our specially designed areas of Koutsogiannopoulos winery. Limited production of bottles.
Harvest: middle of August till beginning of September.
Tasting Notes: It is a fresh wine with delicate aromas of white flowers, herbs, citrus fruits, and a smooth refreshing acidity in the aftertaste.
Food Pairing: Paired with cheeses, salads, seafood, and white meat.
Best served: 8º – 10ºC
