Wine maker’s notes
Technical & Vinification Characteristics: Old vines (100 years old) from the vineyards of Megalochori and Pyrgos, planted at an altitude of 350–400 meters. A late harvest, according to tradition, ensures an enhanced body and a rich aromatic potential.
Only the free-run juice is collected and fermented in large-volume oak barrels, using a small percentage of new wood. The wine is racked from the barrels once it reaches the ideal balance and is transferred to tanks for homogenization. Total aging lasts for 16 months on the lees, followed by an additional 4 months in the bottle.
Organoleptic Profile: The nose is intense, showcasing aromas of nuts, ripe yellow fruits, quince, and a profound minerality. On the palate, the wine is exuberant yet elegant at the same time, featuring a rich, oily mouthfeel, electric acidity, and a long, saline finish.
Serving & Food Pairing: Served at 12–14°C, it pairs ideally with grilled salmon or seared tuna, and can easily stand up to richer dishes like roast lamb and cooked duck. For vegetarian options, try it alongside a smoked eggplant dip with pita bread, or pasta with tomato sauce and basil.
