Vineyard: From younger Assyrtiko vines – which nevertheless reach an average age of 50 years- sourced from the lower-altitude regions of the island: Kamari, Messaria, Vothonas, and Akrotiri, combined with young Aidani and Athiri vines.
Vinification: Classic white vinification at controlled low temperatures to emphasize the fruity side of the varieties. The wine matures on its fine lees for at least 4 months with regular stirring (battonage).
Description: Fruity aromas of melon, pear, and citrus on the nose combine with the island’s typical mineral signature and subtle herbal hints. The palate is soft and crisp with flavorful intensity, a great balance between freshness and ripeness, and a long, complex finish.
Serving & Food Pairing: Served at 8–10°C, it is a perfect match for Aegean appetizers (meze), fried fish, shellfish, and raw seafood.
