Wine maker’s notes
It is best to drink with summer plates with light red sauces, the cuisine of the Cyclades island complex and also meat plates like chicken plates and fresh salads. Better served at 12-14 ̊C.
Bright magenta color. Aromas of summer red fruits and hints red flowers. Elegant texture with the buttery and salty aftertaste and strong hints of minerality.
Hand-picked grapes were placed in a cold room for 12 hours before crushing. Right after the pressing session, must was transferred to the fermentation tank where it was fermented naturally under controlled temperatures, 16-18 οC, for a month. It was matured in stainless steel tanks for 6 months and it was bottled unfiltered.
