Founded in 1997, Haridimos Hatzidakis and Constantina Chryssou began by restoring a high-altitude family vineyard in Pyrgos Kallistis. From a traditional underground "Kanavaki," they pioneered organic viticulture and the revival of Santorini’s rare indigenous grapes. Specializing in iconic varieties like Assyrtiko, the estate masterfully captures the island’s raw and powerful volcanic terroir. Today the family & team honor Haridimos’ profound legacy, managing 100 organic acres with sustainable, artisanal care. Each bottle is a tribute to his vision and "meraki," offering a pure, soulful expression of the Aegean spirit in every glass.
