We are happy to share with you the authentic recipe (400gr of fava give us 4 main portions or more as a side dish): Rinse the fava and put it in a saucepan with water (3:1), skimming as it starts boiling. Add salt, pepper, and one chopped dry onion. Let it simmer on low heat for 35-45 minutes stirring rigorously while mashing until it becomes creamy. Serve sprinkled with extra olive oil, chopped dry onion, caper, caper leaves, and sundried tomato. Enjoy it as a delicious appetizer or a dip. Bon Appetit!
The fava bean is one of the most identifying products of Santorini island and grows in a dry rich in mineral soil. “Santorini Fava” is a “Protected Designation of Origin” that comes from the plant “Lathyrus Clymenum L.” that grows exclusively in Santorini for more than 3500 years.
