Wine maker’s notes about Thalassitis Submerged
Since 2009, every year we sink around 500 bottles of the current vintage of “Thalassitis” just off the east coast of Santorini. Down there, under ideal conditions of stable temperature, we leave them to age away from the light and unaffected by oxygen. Today, at a 20m depth, already an underwater cellar is forming, which at any given moment hosts 4 consecutive vintages of “Thalassitis”.
Out of all the bottles that we submerged back in 2009, only 3 bottles made it back to the surface intact. Out of the 2010s and 2011s, 258 and 141 bottles survived respectively. Unfortunately, at 30m the depth was too ambitious and the high pressure claimed bottles of both 2012 and 2013. From a total of 1050 bottles, only 37 came up (4 from 2012 and 33 from 2013)! One might say that by this point we should have probably realized we were doing something wrong…
But we took our lessons. We changed the depth of submersion, as well as the stoppers. The results were astounding. Both 2014, as well as the more recent 2015 respectively «returned» 400 and 407 intact, incredible bottles.
As per every past vintage, the outcome of the, now, 4-year-long stay in the watery cellar is impressive. The wine has a smokey aromatic dimension with a note of hydrocarbon. The mouth has softened astonishingly, giving the impression of an evolved wine. On the contrary, the color suggests a misguiding youth and, simultaneously, any and all signs of oxidation are absent. This is a rare «hybrid» wine that balances at once between youth and maturity.

Vinification Techniques: All the Assyrtiko grapes selected for THALASSITIS originate exclusively from our vineyards in Episkopi, Akrotiri and Pyrgos regions. The vines are almost 80 years old and have a particularly low-yield that never exceeds 25 hl/ha.
Organoleptic Characteristics: It is a bone-dry wine with strong character: full-bodied, well-structured with crisp acidity, distinctive minerality, and delicate honeysuckle aromas.
Serving Suggestions: Before the serving, a passage in a decanter for, at least, 3 – 4 hours is necessary. Enjoy it at 10oC with seafood, fish, shellfish or even lamb stewed in lemon sauce, generally with flavors of moderate-intensity, where salt, sour or oil predominate.
