Wine Maker’s Notes

With roots on the island of Santorini since 1870, the Koutsogiannopoulos family has built a legacy of winemaking excellence that spans five generations.

Grape Composition: Aidani 60%, Mandilaria 40%.

Carefully selected grapes from top-quality vineyards across the island. Fermentation takes place in stainless steel tanks at controlled, gradually changing temperatures. The wine rests on fine lees for 3 months.

Tasting Notes:
A vibrant rosé color with salmon highlights. The nose is fruity, with dominant aromas of raspberry and pomegranate. On the palate, it is particularly well-balanced, fairly full-bodied, with a long, expressive finish. Fysalis is a fresh and fruity high-quality wine that perfectly matches with seafood, fish, white meat and salads. Best enjoyed at 10-12 °C.
