The Estate Argyros’ construal of an old, distinctive Santorinian style. A very strict selection of very old Assyrtiko vineyards, at least 150 years old, in Pyrgos and Megalochori, harvested at deep ripeness, usually twenty days after the main picking date. Fermented, partially uninoculated, in French oak barriques, at ambient temperatures and aged for twelve months in French oak barriques on fine lees and then approximately twelve additional months in stainless steel, again on fine lees. A wine of imposing proportions, of power but showing no hint of roughness. It needs several years in bottle to grow out of its youth and will unfurl for more than fifteen years.
Vintage description: A mild winter with low rainfall, 155 mm total, followed by a warm, dry, windy spring. A summer without significant heatwaves and continuously high temperatures, but some cool winds reduced hydric stress and disease pressure. Harvest was ten days early.
Fermentation: In French oak, with 64% in 500 lt barrels, 25% in barriques, and the balance in an oval 12hl vat, at ambient temperatures, lasting almost three weeks, partially uninoculated.
Maturation: Twelve months in French oak barrels and twelve additional months in stainless steel vats, on fine lees, and occasional batonnage throughout.
Citrus fruits and apricots in the nose are followed by mineral notes and even faint sage notes. Rich in the palate with excellent structure and finesse has an unequaled balance between maturity and acidity. Very long, salty aftertaste.
Accompanies perfectly white meats cooked in lemon sauce, shellfish, grilled or fried fish, and various seafood dishes. Best served at 10-12°C.
